I am far from an expert, still learning, but here is my little understanding.
Inside Veer - FB aims for outside hip of guard
Outside Veer - FB aims for outside hip of tackle
Inside Veer - Double down on first man B gap or inside. (EX: vs a 5-2 C and PSG would double down on Center to BSLB, PSOT would inside release to get the PSILB, and if the TE was there he can either arc release and block the SS or inside release and seal the PSLB). The QB reads the DT (first man outside B gap) for the dive read, and the next man on los / DE for pitch.
Outside Veer - Double down on first man C gap or inside. (EX: vs a 5-2 the TE and OT would combo the DT to the PSLB. The QB reads the DE (first man outside the C gap) for the dive read, and the next man / flat player for the pitch.
There are lots of variations for blocking schemes, but I think these are the basics.

This is a good explanation from coach Hugh Wyatt of the inside veer. When the defense adjusts that playside DT to a 3 technique, then you run outside veer, as explained by CUI.

By the way, Coach Wyatt is a good coach but Option is not his thing. He is a Double Wing guy.

No, we run it vs just about everything.

Most of the Defenses we see around here give us a 1 tech and a 4i or a 5 to the TE.

If we have a 4i tech, the PSG and PST double to the LB.

If he is a 5 tech, the PST and the TE double him.

We read the EMOL for dive.

vs. an even defense (44) then, the dive key is the de and the pitch is olb on both options?
