Regarding the differences between the 33,35,353, they are all going to be pretty similar but with different flavors. Usually the biggest difference is the personnel for the two overhang players. A 353 will typically have them as fast LB types, and a 335 will have them as more big safety types.
How their roles are designed will dictate the type of person you can play at that position. If they are expected to cover a slot receiver man to man, or play deep cover 2/4 etc, they need to be much more DB types. Things like that.
The base set ups between all the flavors of the odd stack really vary in the D line play, LB's keys, coverages used, man vs. zone, etc. etc. So, like any type of defense, the architect can really shake things up to come up with the variety that suits their personality, age group, and personnel.
