Are there any Power I coaches out there? There doesn't seem to be much information out there regarding it and it is something that I am very interested in.
I'm Just trying to get an idea of the "bread and butter" plays to run out of it as well the complimentary plays to run out of the formation.
What should a Power I playbook consist of?
Is it series based?
How easy would it be to run the veer out of it? I'm thinking that if the Veer can be the central focus of the power I, it could be downright dangerous...but maybe I'm off in my thinking here.
What do defensive coordinators normally do to defend the Power I offense?
To be honest, I'm more of a chess player than a series follower. In other words I run plays to set up the play 3 plays from now. The I is perfect for doing this. Perfect the ISO's and everything else works off of it as long as you have the Iso look. Counter, Dive, Boot Leg, and Play Action all can be deadly!!
Then you can add in Motion, Toss Sweeps, The KEY to any offense, imho, is crawl, walk, run. Assert the basics until they can do them in their sleep, then insert more. Much rather be very good at 6 plays, than mediocre at 12.

Just a suggestion, depending on what age level you coach, I would seriously consider using Zone blocking principles. A lot of folks still use the one on one drive blocks in their schemes and, to be honest, its a hard block for kids to make.

Power I is the "I'm a better man than you" offense. If you have the men to line up and push people around, have at it. It is pretty tough when you have the bodies--especially the line. Belly is also a good play out of the power I.
