Installing Today’s Hybrid Pistol Offense Run & Pass from Top to Bottom

This is my first year implementing the multiple forty and was wondering if someone could explain how they are defending the option out of the I, Veer, etc. At this point we have played gap responsibility in regards to defending the option with the idea to stop FB/QB and make them beat us with the pitch. Any thoughts would be greatly appreciated.

We don't run the 40, but I would probably use the same idea we do now. Any player responsible for gaps A through C have Dive man first vs. the option. The D gap player has QB and the flat player / FS / DBs have pitch. Once the dive man is tackled or for sure doesn't have the ball, the A-C gappers pursue down the line.
We are a multiple 40 team that is gap control, but stresses reading keys on the run to take you to your responsibility. For example, on a veer block to the week side where the tackle blocks down, the end will squeeze down behind the down block and try to get to the mesh point. The nose and mike lb are primarily going to take the dive, but the end should also be able to get there. The olb would recognize the sown block and the path of the tailback. He would end up replacing the end and take the QB. Our safety is our alley player and is responsible for pitch.
On our weakside, on a down block, the end closes down on the dive. The nose and strong inside LBer are also dive responsible. The weak inside LBer scrapes to the QB and the OLB has pitch. The FS would run the alley from QB to pitch. If their is a base block on the DE, he is now QB responsible and the weak Lber would fill the dive. The path of the LBer on both plays is almost exactly the same, he just has to see an open window (base block on the end), or closed window (down block). To the strong side, on all options the 3, 7, and backside LBer are dive responsible, the strong LBer scrapes to QB, OLB has pitch, and FS has QB to pitch.
