So you're looking at 6 defenders in the box with a two deep look in the secondary? If I understand you correctly, it sounds as though the OLBs you mention are actually inverts walked up to the LOS well outside the ends with their hands down in a 5 or 7 technique.
The backside read for your QB is still there from the gun, you'd just have to run speed option to that side if an invert is present rather than a naked keep. Sounds like the numbers inside though might indicate you should run the ball between the tackles. Utilizing trips to the open side and running ISO to your TB or FB would give you a good backside read for your QB as well. I also like to run QB ISO from this and have the tight end wall off the DE with the play going off-tackle.
Just a couple of thoughts off the top of my head. Hope this at least gives you some ideas anyway!

you could try a trap or a counter, but instead of having your guard or tackle go to the next level, have him influence block. if the linebacker is reading the guard, like our guys are taught, then this will put him out of the play. but yes, running inside the tackles is an excellent idea, and ISO might be a play that can get you some big chunks of yards.

If my offense is in spread formation shotgun with single back and no TE.
The D have come forward with 4 4, a 4 man line with single middle LB. and three outside LB,s on the LOS on one side and one OS LB on the other.
Defense are aggressive and bringing the house the OL were blocking heads up with centre stopping the Mike, this left the single back to try and block 3 line backers what would have been the solution if any??
Change formation out of the spread or is blocking possible ?
Running out of a spread is a numbers proposition all the way in my opinion. If you have an advantage physically inside with even or better numbers and a back with good vision and cutting ability I would sure think you should be able to run the ball successfully coach. Good luck with it.

If they bring the house a lot, remember the very best way to beat the blitz is by screens and draws. Teach your youngsters how to exeute them both by rep after rep until they can do it correctly. Quick pops as suggested above are great too, of course, but if you can teach your little guys to execute the screen and the draw, I dare say you will be far ahead of your competitors at your level of play.
