Coach - you are posing way to broad a general question.
For example: Exactly WHAT version of the 4-3 and/or 3-4 are you talking about? There are more ways to play each of those fronts than I can NAME. Which COVERAGES will you play behind these fronts (& stunts)??
Exactly what formation(s) is the offense in? On EACH of the plays you listed, precisely HOW are they blocking it? There are MANY ways to block EACH! Without this knowledge - it would be impossible to set a defense.
For example: The "Flexbone Triple" can be blocked numerous ways. The Counter Trey can be blocked many ways, etc.
Just to take a SIMPLE example: If you are in a 4-3 Over, or 4-3 Over/Shade - you will not GET "Trey" blocking on the Counter (they will "Duece" it). You WILL get "Trey" blocking if you are in a 4-3 Under, or 4-3 Under/Shade! ETC/ETC/ETC/ETC/!
My point was to get a conversation started on what different d-coord. do to stop these plays. I was merely wanting to hear how they use their particular fronts to stop those plays. That is the purpose of the question being open ended.
On our 3-4 have the DE's lined in a 4 (head up on tackles), NG in a 0 (head up on C), and the OLBs in a 9 (outside shade on TE or "off" with no TE. On our 4-3 we play a 31 inside a 5 to the open side and a 7 to the TE. We play primarily a Cvr 3.
On the power: I was talking about down blocking playside FB kicking out EMOLOS and backside G leading through hole.
On the buck: both guards pull.

We run a 3-4 / 5-2 similar to you. Vs the veer and the Power, we like to run a stunt with the DE and OLB. The OLB crashes inside to the C gap and takes the FB vs option, while the DT loops around and plays the D gap / QB.
This is obviously bad vs sweep.
Vs a team that runs trap, we will mix up our alignment and throw in some looks like 2, 0, 2 or 4, 0, 2, etc. We have discouraged pullers by using these types of fronts because the OL has a hard time remembering who to fill for, etc. THen we get man blocking, and we run stunts with the down 3 and can make some plays. We put big LBs at the DL spots. Hope that helps a little.
My first suggestion is to teach WHOEVER they trap (on the 0-1 trap up the middle, & the Counter/Power play further out - both of which you mentioned) to "WRONG SHOULDER", or "SPILL" those plays. That has more effective than any stunts or run blitzes we EVER used (& we bring people quite a bit).
As to OPTION plays - it REALLY depends on how they run them and/or block them! There are SO many options, & so many ways to block them - I don't know where to even begin! You have to handle them DIFFERENTLY!
