The type of return, sideline (between hash and numbers) or field (between the hashes) depends on a variety of factors: Opponents kick off scheme (directional?), alignment (balanced, middle or hash) and what player makes the most tackles. I believe that you scheme your opponent's personnel.
Our special teams manual has a greater detailed explanantion but:
Sideline - use a form of picket with a double double team kick out
Field - crossfield blocks with a 3-man wedge.
When teaching kick-off blocking, get your players to work perpendicular to a white line. This keeps them from blocking in the back.
