Installing Today’s Hybrid Pistol Offense Run & Pass from Top to Bottom

We are playing a team that will put a LB/DB type of player on the TE and Jam him on the line, but then wil cover him man to man.
We are an option team, but run some other plays as well like trap, power, and toss. We like to use double tight Ace and trips, as well as open trips and doubles. We throw the ball well. I think they are in trouble if they try this against us, but I can't decide the best way to attack it.
On the "POWER" - have the TE release on the next defender outside (which will cause THAT LBer to turn & slide out with him). Then kick the LBer out on the "POWER", or, "COUNTER"! Often the LBer doesn't even see the kick out or trap coming because he focuses on the TE.
