1. What are the best resources?
2. What exact plays would you run in your first year?
3. How many plays are too much?
There is flexbone stuff everywhere. It should be easy to find resources. As far as plays...an option that meshes in A, B, and C gap, toss, counter, jet sweep, trap, iso, play-action passes, 4 verts, and a few three step and 5 step passes. If you get too much over 15 or 20 plays total, you're over-doing it. The offense is based on packages, misdirection, option, and being very fundamentally sound. I've run the system, and although I am not a huge fan of it, if you have the speed at the wings and a QB who can run it, it is a solid system.

Look on Coaches Choice, they have DVDs and Books. Anything from Navy, Georgia Tech. Paul Johnson era at GA Southern, Navy, GT. Tony DeMeo when at Washburn, Fisher DeBerry at Air Force, Mike Lee at Rice. These all have been successful with the flexbone.
Probably no more than 10. Be able to execute the ones you have versus all defenses. Rep, rep, rep, and rep somemore. You can't rep this offense too much.
