When I'm making an open-field tackle should I break down and let the ball carrier kind of pick his direction before I make the tackle or should I just go right through him?
Near sideline, gain as much ground as possible, break down (buy time) inside shade of ball carrier, use sideline as an extra defender and force him to choose the sideline, wait for him to choose side, step flat with foot from chosen side, fit up with head in front and run to the sideline.
In middle of field, break down head up, wait for him to commit, step laterally with closest foot, fit up with head in front and run to the sideline.
The important thing is making the tackle. If the ball carrier wants to run through you, let him, but be sure to make the tackle. Sacrifice your ego to make a touchdown saving tackle.
Key coaching points......
Knees bent. Be sure to step with the proper foot. Don't cross over step. Get head in front of ball carrier. Be patient, don't attack. Make the sure tackle.
For us, the definition of the ball carrier committing is after the ball carrier takes his cross over step, which denies him his cutback.
