Train all your kids as athletes. Yes you can change auxilary lifts to specific positions, but the core lifts should be the same. Squats, cleans, bench, push press, and deadlift.

OC, Sticking with mostly multi-joint, compound lifts will be your best bet. All assistance lifts should focus on bringing up weak or lagging bodyparts. For example, if an athlete has weak triceps, bring em up so that he will have more strength in the bigger lifts.
Most high school athletes are weak in the hams, low back, glutes and abs. This area is huge in developing power and speed in athletes, so make sure it is a priority in your training.
Some lifts to consider using: FULL back squats, front squat, good morning, reverse-hyperextensions, cable pull throughs, Deadlifts of several different variations...(snatch-grip, sumo, romanian, bulgarian, traditional, etc), step-ups, lunges, incline presses, bench presses (various grips), overhead pressing, rows (bent over, seated, db), pull ups. You get the idea.
As for the olympic lifts, technique is the absolute no. 1 priority when performing them. They are great in developing power, but if good form is not used then the benefit is pretty much wasted.
