Assuming that you only have a limited time to do it and you can't use sheilds or dummies, I would purchase a guideback (strip with the Center, OG's OT's and TE's painted on it already) or a firehose with the OL marked off and go through your plays with the QB and RB's on their tracks.
I would use players on the other side as the defenders for your QB to read to determine to give or keep. They will not of course hit the QB or RB but at least your getting good reps in. We plan on doing this all off season so that by the time the season hits, it's second nature. We will do all our basic run plays in this manner. To be honest with you, not sure what else you need to do.
