Installing Today’s Hybrid Pistol Offense Run & Pass from Top to Bottom

Any advice from coaches on defending the Straight-T offense? Opponent runs the standard 2 TE "T" offense with FB Trap, Power Off-Tackle, QB Keep, FB Belly, and Power Sweep plays. We run a 50 defense, usually pretty straight up. Two years ago we ran a 5-3, last year we ran our base 5-2 and inverted SS and FS really tight, rotating on flow.
We work hard to keep our DE's disciplined and taking on kickouts and traps quickly and violently. Our LB's read the uncovered Guards and react instantly. Our CB's read the TE's for run / pass reads.
In the 5-3 we did a more balanced job, but the efficent Off-Tackle Power killed us in the long sustained drives. The 5-2 with the inverted safeties shut that down completely, but the QB Keeper and Power Sweep overwhelmed our CB's.
What techniques do you teach your DL? Do you slant, penetrate (I'd think not), bull rush, or fight pressure? Is there a way to plug the off-tackle hole without being overwhelmed on the perimeter? How deep do you play your ILB's?
